Many health benefits are ascribed to pure Pine Syrup - and while we can't speak to that, we can tell you we make this right. We pick and wash each cone by hand, and cold process them to preserve every drop of goodness.
Like Maple Syrup, Pine Syrups comes from trees - but there the comparison stops. Pine Syrup is more akin to fine Vanilla, with a depth, complexity and richness of flavour that makes it truly unique.
Every Spring and early Summer we gather freshly grown, green Pine Buds and Pine Tips from a variety of Pines throughout Western Canada - Blue Spruce, Black Spruce, Scot's Pine, Mugo Pine and others are used on their own or blended together to create our Syrups. They are then processed and laid down for 8 to 10 months to allow the sap, aromatic oils, resin and other compounds to be fully extracted. These include:
Due to the amount of labour, time and care we put in to gathering and processing our syrups, we make small batches each year of 3-5,000 bottles. This ensures we keep quality as high as possible, ensuring each blend and bottle is a memory of Spring in the Rocky Mountains.
